For optimal preservation of fish quality, ensure that it is stored at the appropriate temperature for either short-term or long-term storage. In the case of large-scale production and export, quick freezing at a lower temperature is recommended to maintain the freshness and flavor.
- Refrigerated: 0°C to 2°C.
- Freezing: -18°C to -30°C.
- Quick freezing: -35°C to -40°C.
- For some high-valued Seafood, like tuna, we need a lower temp to preserve its taste and high quality, which will up from -40°C to -60°C.

Best Practices for Seafood Storage
Processing room: The temperature should be maintained between +10°C to +18°C. This temperature range helps ensure food safety while providing a suitable working environment for workers.
Cold Room/Cold Storage: Store seafood at temperatures close to 0°C, like -5°C to +5°C.
Freezer Room: Freeze seafood at -15°C to -30°C or lower.
Blast Freezer Room: Rapid freezing of seafood at -30°C to -45°C or lower, using specialized equipment and techniques.
Ultra Blast Freezer Room: for high quality seafood like tuna, temperature at -50°C to -60°C.
